Borlotti Minestrone Soup

Ingredients: 

  • 2 x 400g cans chopped tomatoes with garlic and herbs 
  • 2 vegetable stock cubes, crumbled 
  • 2 x 400g borlotti beans, drained and rinsed 
  • 400g courgettes, roughly chopped 
  • 200g dried macaroni or chifferi rigati pasta shapes 

 

Method: 

1. Put the chopped tomatoes and stock cubes in a large saucepan, with 800 ml of boiling water. 

2. Bring to the boil and simmer for 8-10 mins. 

3. Add the beans and courgettes and cook for a further 8-10 mins, until the courgettes are fully cooked. 

4. Cook the pasta as per pack instructions and drain. Add to the soup and bring back to a simmer.  

5. Simmer for 2 mins then season to taste and serve.
