Chicken, veg and potato tray bake
Ingredients
- Chicken thighs and drumsticks
- Small potatoes
- 2 onions-chopped into small pieces
- 2 courgettes- chopped into small chunks
- 2 carrots-chopped into small pieces
- (You can also use other vegetables such as peppers, sweet potatoes, tomatoes etc)
For the marinade
- Four tablespoons of olive oil
- I teaspoon of mustard
- I teaspoon of turmeric
- I teaspoon of dried thyme or oregano
- I teaspoon of garlic powder
- Salt
- Pepper
- Teaspoon of honey
- Juice of half a lemon
Method
1. Heat oven to 210 degrees centigrade.
2. Line a baking tray with some foil or baking paper. Lay out the chicken pieces on the tray and in between the gaps place the chopped vegetables.
3. In a small bowl mix all the marinade ingredients together until combined. Pour marinade over the chicken pieces mainly (if there’s any left pour it over some of the veggies). Season everything with a little salt and pepper.
4. Place in the oven for approx 50-60 mins. If you have a grill function on your oven, after this time you can grill the tray bake for approx 5 mins (but don’t worry if you don’t have a grill).
5. When you take it out the oven, make sure the chicken is thoroughly cooked before you eat it.
