Chocolate and banana buns

Ingredients (16 buns)

  • 4 medium ripe bananas, mashed
  • 2 eggs, lightly beaten
  • 100 ml rapeseed oil, plus extra for greasing
  • 175 g self-raising flour
  • 1 tbsp cocoa

 

Method

1. Pre-heat oven to 200°C/400°F/gas mark 6.

2. Grease two fairy cake/muffin tins or put cupcake cases in the holes.

3. Mix together the bananas, oil and eggs.

4. Sift the flour and cocoa into the bowl and stir to combine all the ingredients.

5. Spoon the mixture into the bun tin.

6. Bake for 10-15 minutes, until well risen and firm to the touch.

7. Cool for a few minutes in the tins, then turn out onto a wire rack to finish cooling.
