Chunky Minestrone Soup

Ingredients
- 1 tsp olive oil
- 1 onion, roughly chopped
- 1 litre hot vegetable stock
- 3 tsp Italian seasoning
- 3 carrots, roughly chopped
- 2 potatoes, roughly chopped
- 3 tomatoes, roughly chopped
- 2 parsnips, peeled and roughly chopped
- 7 tbsp passata
- 150 g dried pasta
- 125 g baby spinach
- 125 g cabbage, shredded
- 400 g can butter beans, drained
Method

Fry the onion for 2-3 mins in a teaspoon of olive oil, to soften.

Add a little stock and the Italian seasoning and cook for 2-3 mins

Add the remaining stock, carrots, potatoes, tomatoes, parsnips and passata and simmer for 1 hr.

Add the pasta and cook until almost tender. Stir in the spinach, cabbage and beans and cook for a further 3 minutes.

Season with black pepper and serve with thyme scattered over.
