Chunky Minestrone Soup

Prep and cooking time: 1 hr 40 mins 

Ingredients

  • 1 tsp olive oil
  • 1 onion, roughly chopped
  • 1 litre hot vegetable stock
  • 3 tsp Italian seasoning
  • 3 carrots, roughly chopped
  • 2 potatoes, roughly chopped
  • 3 tomatoes, roughly chopped
  • 2 parsnips, peeled and roughly chopped 
  • 7 tbsp passata
  • 150 g dried pasta 
  • 125 g baby spinach 
  • 125 g cabbage, shredded 
  • 400 g can butter beans, drained 

 

Method

  1. Fry the onion for 2-3 mins in a teaspoon of olive oil, to soften. 

  1. Add a little stock and the Italian seasoning and cook for 2-3 mins 

  1. Add the remaining stock, carrots, potatoes, tomatoes, parsnips and passata and simmer for 1 hr. 

  1. Add the pasta and cook until almost tender. Stir in the spinach, cabbage and beans and cook for a further 3 minutes. 

  1. Season with black pepper and serve with thyme scattered over.
