Classic Cheese and Onion Pie

Ingredients
- 600 g floury potatoes, such as Desiree or Maris Piper, roughly chopped
- 200 g carrots, finely sliced
- 100 g green beans, trimmed and finely diced
- 3 large onions, finely diced
- 3 large eggs
- 4 tsp dried parsley
- 200 g fat free cottage cheese
- 120 g cheddar, grated
- Chopped fresh parsley, to serve
Method:
1. Boil the potatoes for 20-25 mins
2. At the same time , cook the carrots and green beans in a large saucepan for 3-4 mins. Drain and set aside.
3. Heat 1tsp olive oil in a frying pan and stir fry the onions for 10-12 mins until softened
4. Preheat oven to gas mark 4 / 160 C and grease an overproof pie dish with olive oil
5. Drain the potatoes and mash until smooth.
6. In a bowl, whisk together the eggs, dried parsley and cottage cheese. Add to the potatoes and stir to mix well, Add the reserved vegetables and onion mixture and stir well.
7. Transfer the mix into the prepared oven pie dish and spread out evenly. Sprinkle over the cheese and bake for 35-45 mins until golden brown.
8. Sprinkle with the chopped fresh parsley and serve
