Cottage pie
Ingredients
- 125 g beef mince
- 25 ml sunflower oil
- 60 g carrot, finely chopped
- 50 g onion, finely chopped
- 450 g passata
- 200 ml water
- 30 g sweetcorn
- 90 g green beans
- 100 g spinach
- 470 g Maris Piper potatoes
Method
1. Preheat oven to 180°c
2. Heat up a wide pan with the oil in it, add the beef mince and begin to break it apart with a spoon
3. Once the beef is all brown, add your carrots, onions and tomato puree. Stir and cook for 5 minutes
4. Add the passata and the water, scrape the bottom of the pan to deglaze
5. Bring to a simmer and cook for 30-45 mins
6. Peel you potatoes and add to cold, salted water
7. Bring them up to a simmer and cook until fork tender, then drain the water and leave to steam for 5 minutes
8. Mash as much as you want and set aside
9. When the beef mix has reduced to your desired consistency, transfer to an oven-proof dish and then top with the mash
10. Bake in the oven until the top is golden brown
11. Remove from the oven and enjoy
