Creamy pesto style houmous

Ingredients

  • 2 x 400 g Chickpea, drained and rinsed 
  • Juice of 1 lemon 
  • 4 garlic cloves, crushed 
  • 1 tsp dried Italian mixed herbs 
  • 6 tbsp each of chopped fresh Basil and flat leaf Parsley 
  • 250 g fat free natural cottage cheese 

 

Method

1. Put the chickpeas in a food processor and blend until softened 

2. Add the lemon juice, garlic, dried and fresh herbs and the cottage cheese. Blend again until fairly smooth. 

3. Transfer to a serving bowl and season lightly. Chill until ready to use.
