Fruit and Nut Bar

Ingredients

  • 175g butter
  • 110 g honey
  • 100 g light brown sugar
  • 250 g oats
  • 125 g pecans
  • 75 g pitted dates
  • 75 g raisins
  • 150 g dried figs
  • 30 g pumpkin seeds
  • 25 g sunflower seeds
  • 25 g desiccated coconut

 

Method

1. Preheat oven to 200°c

2. Add butter, sugar and honey to pan, begin to melt on a low heat

3. Line 9x9 baking tray with parchment paper

4. Add all other ingredients to a mixing bowl and thoroughly mix

5. Bring the butter mixture up to a boil ensuring all the sugar has dissolved and pour onto the dry mix

6. Mix thoroughly and transfer to your baking tray

7. Press into all corners and ensure the mixture is flat

8. Bake for 10 minutes, remove from the oven and leave to chill
