Oat pancakes

Ingredients (2 portions)

  • 2 bananas
  • 100g of oats
  • 3 large eggs
  • 100g of blueberries
  • 1/2 tsp salt
  • 1 tbsp oil

 

Method

1. In a blender (or with a fork) blend the bananas and eggs, oats and salt, until it looks like a batter.

2. Heat a frying pan over medium heat and add a bit of oil.

3. Pour batter into the pan to your preferred size - makes two large, or more small.

4. Scatter blueberries on top.

5. Once bubbles begin to form on the top, flip with a spatula/fish slice (test the sides first to check it will flip, if not leave for longer).

6. Cook until both sides are golden brown.

7. Repeat until remaining batter is used up. Serve with a dollop of greek yoghurt and any leftover berries.

Tip: Use a non-stick pan / make sure there is enough oil so pancakes don't stick!
