Roasted red pepper and chive falafels

Ingredients (6 servings)

  • 2 slices wholegrains bread, roughly torn
  • 2 x 400g cans chickpeas, drained and rinsed
  • 100g roasted red peppers, roughly chopped
  • 1 tsp ground cumin
  • 1 egg, beaten
  • 2 tblsp finely chopped fresh coriander
  • 1 red chili, deseeded and finely chopped
  • 25g fresh chives, finely chopped
  • 1 tsp olive oil

 

Method: 

1. Place the bread in a food processor and blitz until fine crumbs. Add the chickpeas, red pepper, cumin, egg, coriander, red chilli and chives and blend again until fairly smooth. 

2. Transfer to a mixing bowl and season lightly. 

3. Add a teaspoon of olive oil to a frying pan. Using a tablespoon, divide the mixture into 24 equal portions and, using finger, working into patties. 

4. Working in batches, place the patties in the pan and cook for 2-3 mins on each side, until lightly browned and cooked through.
