Sweet potato wedges

Ingredients 

Prep10 minutes, cook 30 mins, serves 4 as a side

  • 2 sweet potatoes 
  • 2 tablespoons olive oil
  • 1 teaspoon of finely chopped thyme or rosemary

Method

  • Heat the oven to 220C/200C fan/gas 7
  • Cut any knobbly ends off the sweet potatoes, peel if you like (I like skin on)
  • Cut into halves then long wedges
  • Put wedges onto a large baking tray, sprinkle over thyme or rosemary, salt and pepper and mix together to make sure wedges are covered in oil and seasoning
  • Cook for 15 minutes, turn over and cook for another 15 minutes (30 in total)
