Sweet potato wedges

Prep10 minutes, cook 30 mins, serves 4 as a side
- 2 sweet potatoesÂ
- 2 tablespoons olive oil
- 1 teaspoon of finely chopped thyme or rosemary
Method
- Heat the oven to 220C/200C fan/gas 7
- Cut any knobbly ends off the sweet potatoes, peel if you like (I like skin on)
- Cut into halves then long wedges
- Put wedges onto a large baking tray, sprinkle over thyme or rosemary, salt and pepper and mix together to make sure wedges are covered in oil and seasoning
- Cook for 15 minutes, turn over and cook for another 15 minutes (30 in total)
